The fatty acid and sterol composition of (i) walnut, (ii) hazelnut, (iii) almond, and (iv) avocado kernel oil are shown in tables. The main fatty acids are: linoleic 59.2-63.4% in (i) and oleic acid 79.9-82.6% in (ii), 72.0-75.8% in (iii), and 59.3% in 1 sample only of (iv). The main sterol in all 4 oils was beta-sitosterol, 87.5-94.0% on SE 30, 81.2-88.8% on OV 17.
