Abstract The content of oil and its characteristics and fatty acid composition were determined in the germ and reserve tissue of 42 species of vegetables from 14 families. Appreciable differences in fatty acid composition were often shown in the oil from the germ and reserve tissue, particularly in the proportion of linoleic and oleic acids.
