Abstract The contents and composition of phospholipids in olive, avocado, cottonseed, corn and rapeseed oils were determined. Phosphatidylcholine, phosphatidylethanolamine and phosphatidylinositol were present in all the oils. Phosphatidylserine was only detected in olive, cottonseed and rapeseed oils. In all the oils except rapeseed, the phospholipid and neutral lipid fractions have a similar fatty acid pattern with the same dominant fatty acid, but with a different degree of unsaturation. The content of saturated fatty acids was higher in the phospholipids fractions than in the corresponding neutral lipid fractions. Tabulated data are presented on the oil contents, phospholipid contents and composition, % fatty acid composition of phospholipids and neutral lipids in several samples each of extracted flesh and kernel and pressed virgin olive oil, extracted flesh and kernel avocado oil, prepressed whole kernel and extracted prepressed meal cottonseed oil, extracted rapeseed oil, and of extracted corn germ and meal oil (1 sample of each only).
