In this paper,we analyzed the natural variation in Perilla frutescens.Twelve accessions from different regions in Shanxi province were surveyed for content of oil and fatty acid composition in their seeds.The results showed that:the oil content of the samples ranged from 30.83%~32.76% of seed dry weight,no significant difference between samples.Through comparison and analysis of fatty acid component of different accessions through GC method,we found that:the fatty acid components in perilla seed oil included palmitic acid,stearic acid,oleic acid,linoleic acid,linolenic acid,arachic acid,aracholeic acid etc.;according to the GC analysis,their polyunsaturated fatty acids reached as high as about 90%,and the linolenic acid content ranged from 57.8%~ 62.1%,oleic acid content ranged from 20.2%~23.6%.It showed that perilla seed oil was a new resource for development of the nutrition and health oil.
