Supercritical CO_2 fluid extraction was applied to Grain Amaranth seed oil processing. The influence of extraction pressure, temperature, time and SC-CO_2 flow on the extraction rate were investigated by orthogonal design,and the fatty acid composition of Grain Amaranth seed oil was determined by GC.The results indicated that the optimum extraction pressure, temperature and SC-CO_2 flow for the maximum extraction rate (5.96%)was 35 MPa,35℃ and 10 L/h respectively.The contentof unsaturate fatty acid in Grain Amaranth seed oil was 70%,and the content of squalene was 7.14%
