This article analyzed the fatty acid in papaya seed by GC-MS,comparing external standard method and peak area normalisation method to analyze quantitatively. There are different kinds of fatty acid in papaya seed. The main kind is unsaturated fatty acid. The papaya seed had 77.56 % unsaturated fatty acid. The content of the four fatty acids in papaya seed: oleic acidpalmitic acidstearic acidlinoleic acid.
