小米油脂成分研究_霍权恭 . Study on components of millet oil

Abstract

The content of millet's crude fat and millet oil's related index were studied,such as saponification value,unsaponible matter content,colour,composition of fatty acid and the sterols.The results showed that the content of millet's crude fat was 1.55%～4.91%,the saponification value was 192～197 mgKOH/g,the content of unsaponifiable matter was 1.97%～3.98%,the lovibond RYB colour was 70(Y) and 4.0～12.0(R),the total content of unsaturated fatty acid is 82.02%～90.39%,and 6 kinds of sterol were identified.
