Abstract [Objective] The research aimed to determine and analyze the fatty acid compositions of Parthenocissus quinquefolia seed.[Method] The lip soluble components were extracted from Parthenocissus quinquefolia seed by Soxhlet extraction method.The extracted fatty acids were identified by gas chromatography-mass spectrometry(GC-MS)after methyl etherification treatment,and the relative percentage of each component was confirmed by peak-area normalization method.[Result] 11 kinds of fatty acid,including 6 kinds of unsaturated fatty acid and 5 kinds of saturated fatty acid were identified from oil of Parthenocissus quinquefolia seed.The main components of unsaturated fatty acids were linoleic acid(87.14%),palmitoleic acid(0.05%),8,11-eicosadienoic acid(0.12%),11-eicosenoic acid(0.22%),etc.While the main components of saturated fatty acids were palmitic acid(8.13%),stearic acid(2.60%),eicosoic acid(0.09%),margaric acid(0.09%),etc.[Conclusion] This result proved that the nutrition and health value of Parthenocissus quinquefolia seed was higher and it had better-development and utilization prospect.
