The extraction process of kelnel oil from Canarium pimela Koenig with Soxhlet’s extraction was optimized by orthogonal experiment,and determined fatty acid composition of the oil by GC-MS after methanol-esterification,and physicochemical properties of the oil such as the saponification number,acid value,and iodine value,were determined.The result showed that the oil length of kernel of Canarium pimela was 71.4%,and the optimal extracting conditions were as followed:relative density 0.911 3 g/cm3,refractive index 1.469 1,acid value 0.989 mg/g,saponification value 186.2 mg/g,iodine value 84.6 g/100 g;the essential component of fatty acids were linolic acid,oleic acid,hexadecanoic acid and stearic acid.In which,the content of hexadecanoic acid was 34.96%,stearic acid was 4.83%,and the gross of unsaturated fatty acid reached 60.21%.The extraction rate of Canarium pimela kernel oil was high.Contents of fatty acid of the kernel oil resembled to palm oil.The oil was stable and its nutritive value was better than that of palm oil,and it could be sort out to palm acid oil.
