Abstract The composition of Cornus officinalis seeds,the physicochemical properties and the fatty acid composition of the Cornus officinalis seed oil were mainly analyzed.The content of the reducing sugar,total sugar,crude protein and crude fat of the Cornus officinalis seed were 29.2%,64.7%,21.7% and 13.1%,respectively.The acid value,iodine value,peroxide value and saponification value of Cornus officinalis seed oil were 0.97 mgKOH/g,113.8 gI/100 g,8.9 mmol/kg and 186.5 mgKOH/g,respectively.The saturated fatty acids of Cornus officinalis seed oil were mainly palmitic acid(10.40%),stearic acid(3.49%)and behenic acid(3.32%),and the unsaturated fatty acids were mainly composed of oleic acid(35.80%)and linoleic acid(34.60%).Moreover,it was found that there was 5.51% of the erucic acid in Cornus officinalis seed oil.
