Abstract [Objective] The aim was to comprehensively evaluate nutrient value of Allium mongolicum Regel seed[Method] With the wild Allium mongolicum Regel seed as experimented material,a few nutrient component contents were determined by using the analytical methods of gas chromatography,liquid chromatography and general one.[Result] The contents of fat and total sugar in A.mongolicum were the highest,starch content was second one and that of protein was lower.The polysaccharide was dominated in total sugar,which accounted for 57.31% of total sugar.The contain of Vc was rich,up to 263.49 mg/100g FW.There were 18 kinds of amino acids contained in the seed of A.mongolicum,among which,the glutamic acid was highest,the essential amino acids for human body accounted up 28.4% of total ones,the nutrition of necessary amino acids was in equilibrium with SRC of 38.37.In A.mongolicum seed,the content of unsaturated fatty acid was 92.15%,the human essential fatty acid content was 74.92%,linoleic acid content was 74.57% and the PUFA/ SFA ratio was 11.78.[Conclusion] A theoretical basis was provided for the synthetic development and utilization of A.mongolicum seed by this research results.
