Abstract The composition of fatty acid and amino acid in the seed kernel of white pitaya was analyzed by GC-MS technique and amino acid automatic analysis apparatus respectively。The content of unsaturated fatty acid was 80.83% and the content of necessary amino acid was 24.38%。
