Abstract The oil contents and fatty acid compositions of the peanut seeds and Perilla frutescens seeds are studied using methods of chemical extraction and GC/MS analysis.The results shows that oil contents of the peanut seeds and Perilla frutescens seeds are 34.60% and 39.40% respectively.According to the GC/MS analyzing results,eight kinds of fatty acids,linoleic acid,oleic acid,palmitic acid,stearic acid,docosanoic acid,10-octadecenoic acid,eicosanoic acid and 11-eicosenoic acid,are detected in peanut seeds oil; only five kinds of fatty acids,palmitic acid,linoleic acid,α-linolenic acid,stearic acid and 10-octadecenoic acid,are detected in Perilla frutescens seeds oil.The major compositions in the sample of peanut oil are linoleic 53.05% acid,31.74% oleic acid and 7.95% palmitic acid; while those in the sample of Perilla frutescens seeds oil are α-linolenic 80.06% acid,11.83% linoleic acid and 5.37% palmitic acid.The content of unsaturated fatty acids in total fatty acids in peanut seeds oil and Perilla frutescens seeds oil is 85.21% and 92.82% respectively.
