Abstract A procedure of preparing the seeds oil of the red thin Cayenne pepper made in Shaanxi and Xinjiang by solvent extraction is described.Fatty acid composition of cayenne pepper seeds oil is analyzed by gaseous phase colour spectrum. The content of unsaturaed fatty acid in thin cayenne pepper seeds made in Shaanxi and in Xinjiang is 77.7% and 84.9% respectively.The content of unsaturated fatty acid in thin cayenne peper seeds is higher than the popular seeds of oil plant.
