Abstract

Fatty acid composition and physical/chemical indexes of walnut oil were examined.Results:The acid val- ue and malondialdehyde content of walnut oil increase and the iodine value declines with prolonging storage time.There are significant correlations between the physicochemcal indexes of walnut oil and its contents of unsaturated fatty acids:highly significant negative correlation between oleic acid content and iodine value,highly significant positive correlation between linoleic acid content and iodine value,and significant positive correlation between linolenic acid content and iodine value.
