Taking papaya seeds as raw material,single-factor tests and response surface experimental design were applied to study the effects of solvent/material ratio,extraction temperature and time on the extraction rate of papaya seed oil,and to optimize the extraction parameters.The physical and chemical properties of papaya seed oil were analyzed and fatty acid composition was determined by gas chromatography-mass spectrograph(GC-MS).Results:The optimal parameters of extracting papaya seed oil are using hexane as solvent,solvent/material ratio 3.18∶1(mL∶g),extraction temperature 61 ℃,and time 2.5 h.Under these conditions,the extraction rate reaches 21.27%.The acid value and peroxide value of the produced papaya seed oil meet the standard for edible oils and fats,but the impurity content is high,so further refine is needed.The papaya seed oil is composed of five fatty acids,mainly palmitic acid(18.90%),oleic acid(71.06%) and linoleic acid(4.28%).
