This preliminary study was carried out to evaluate nutritional use of Salvia miltiorrhiza seed protein and fattiness which provided from GAP base of Shangluo,Shaanxi.We measured the seed total and component protein contents by Kjeltec VS-KT-P Protein Analyzer,amino acid component by 121M Amino Acid Analyzer and fatty acid component by gas chromatography.The results showed that total protein content was 14.46%,glutenin was 72.57% which is the highest in the protein components,albumin was 17.03%,hordein was 6.09%,and globin was 4.31%.The EAA(essential amino acid) was 59.2% among the TAA(total amino acid),the SRC of the most EAA was close to 100 except lysine was 88.91.The unsaturated fatty acid content in the seeds was 88.1% and the components of them were flax acid(28.84%),sub-oleic acid(37.43%) and oleic acid(22.03%).We also found a fact that the content of PUFA(polyunsaturated fatty acid) was 66% and obviously higher than MUFA(monounsaturated fatty acid) which was 22%.Those results gave us a hint that Salvia miltiorrhiza seed have a great nutritional value and health care protection to human.
