Abstract Supercritical fluid extraction,Soxhlet extraction,and ultrasonic extraction methods were employed to extract oil from wild walnut in Linzhi area of Tibet.The composition of the fatty acids of the extracted wild walnut oil was determined by means of gas chromatography-mass spectrometry.Results show that all the three methods can be used to extract oil from the wild walnut at a rate of over 57%;and the contents of main fatty acids in the walnut oil are linoleic acid 62.54%,oleic acid 18.93%,linolenic acid 7.27%,cetytic acid 5.36%,arachidonic acid 4.11%,and stearic acid 1.78%.This indicates that the wild walnut oil has a high content of unsaturated fatty acids,in particular,linoleic acid,which is very beneficial to human health.
