Macadamia nut oil was extracted and esterified, and then analyzed by GC-MS. The results showed 12 fatty acids were identified in nuts oil. The relative content of the unsaturated fatty acids were 69.03%, including oleic acid, palmitoleic acid, 11-dodecenoic acid and the relative content of the saturated fatty acids were 31.32%, including palmitic acid, stearic acid, arachidic acid. The oleic acid had the highest relative content of 49.24%.The results contributed to research macadamia nut further, and then make full use of it.
