Abstract The composition of fatty acid in Spinacia oleracea L. seeds oil were analyzed qualitively by GC and GC/MS. The results indicated that the fatty acids in Spinacia oleracea L. seeds oil were palmitate acid, oleic acid, linoleic acid etc. Thirteen kinds of fatty acids had been identified. The contents of unsaturated fatty acids were 83.26 %. Among them, the oleic acid were 24.93 %, the linoleic acid were 56.7 %, the 11-eicosenoate acid were 1.06 %, respectively.
