Abstract Seed oils in mulberries from three different regions including Yunnan, Beijing and Hebei were extracted by ultrasonic assisted extraction, and the oil yields were 29.46 %, 35.66 % and 26.82 % respectively. The physical and chemical properties of seed oils were determined by chemical analysis. The fatty acid compositions of three mulberry seed oils were analyzed by gas chromatography-mass spectrometry (GC/MS), and the relative content of each fatty acid was calculated by area normalization method. Three kinds of mulberry seed oil contained 15 kinds of fatty acids. The saturated fatty acids accounted for about 20 %, while unsaturated fatty acids accounted for about 80 %. Unsaturated fatty acids were oleic acid, linoleic acid and linolenic acid mainly. The contents of linoleic acid were the highest among the fatty acids in seed oils from three different region mulberries, which were 65.14 %, 69.55 % and 69.41 %, respectively.
