The fatty acid compositions of 11 nut species were determined. Oleic acid, linoleic acid and α-lenolenic acid are the main unsaturated fatty acids in nuts, which directly affects the level of high density lipoprotein cholesterol(HDL-c) in human body. Absorbing too much linoleic acid(ω-6 polyunsaturated fatty acid ) may increase risk of cardiovascular disease, such as coronary heart disease and hypertension. But oleic acid and α-lenolenic acid(ω-3 series polyunsaturated fatty acid) may reduce risk of cardiovascular disease. Some valuable data and advises are advanced for properly taking food rich in fat, like nuts, and for controlling the proportion of ω- 6 and ω-3 fatty acids in this paper.
