Abstract Physico-chemical characteristics and fatty acid composition of oils from babassu nut, Orbigyna martiana, Barb. Rod., tucum nut, Astrocaryum vulgare Mart. and from piassava nut, Attalea funifera Willd., were reviewed. The sterolic fraction of unsaponifiable matter was studied and beta-sitosterol appeared as its main components in the fatty fraction. The obtained data are not sufficient for detection of individual oils when mixed with any of the other ones.
