Abstract Triglycerides containing acids with trans-3 unsaturation (16:13, 18:13 and 18:33, 9, 12) showed a marked retardation of reaction rate with pancreatic lipase. An inverse relationship was found between content of trans-3 unsaturated acids in seed oils and lipolysis rate. The trans-3 unsaturated acids were concentrated in the diglyceride and residual triglyceride fractions of the lipolysates, and only small amounts were present in the free acid and monoglyceride fractions. © 1969 American Oil Chemists' Society.
