A study of the content and composition of the long-chain fatty acids isolated from different parts of apple fruits

Abstract

Free and total long-chain fatty acids were estimated in apples. The main acids in all parts of the fruit were palmitic, stearic and oleic, and the qualitative composition was similar. A common biosynthetic origin is suggested for long-chain acids in the inner part of the fruit.
