Abstract The following Leguminosae were investigated: clover, lupine, alfalfa, pea, broad bean, lentil, chick-pea, judas-tree, 3 species of Acacia, 3 varieties of French beans. Fatty acid composition and triglyceride structure were studied by means of pancreatic lipase digestion and gas chromatography. Lipoxidase content and sterols (campesterol, stigmasterol, beta-sitosterol and Delta 7-sterol) were also determined.
