Physicochemical characteristics, fatty acid and sterol composition were studied in grains of Agropyron elongatum, Bromus catharitus, Festuca arundinacea, Stipa hyallna and Panicum maximun. The highest protein level was found in A. elongatum. Linoleic and palmitic acids were the predominant fatty acids in all species. beta-sitosterol was by far the most prominent sterol component in all samples, while Delta(7)-stigmastarol was detected in only trace amounts.
