Further investigations on the composition of the sterol fractions of Olea europaea, Carthamus tinctorius and Helianthus annuus

Abstract

The sterol fractions of olive, safflower and sunflower oils were analysed by gas-liquid chromatography. Two sterols not previously detected were found in significant amounts: DELTA 5-avenasterols 7.0 to 18.8% of sterol fraction in 10 samples of olive oil, 3.4 to 4.8% in 3 samples of safflower, 3.0 to 6.2% in 3 samples of sunflower oil, and trace amounts, 3.5 to 6.9, and 1.1 to 4.4%, respectively, for DELTA 7-avenasterol.For earlier work see NAR 44, 123.
