The sterol fractions of olive, safflower and sunflower oils were analysed by gas-liquid chromatography. Two sterols not previously detected were found in significant amounts: DELTA 5-avenasterols 7.0 to 18.8% of sterol fraction in 10 samples of olive oil, 3.4 to 4.8% in 3 samples of safflower, 3.0 to 6.2% in 3 samples of sunflower oil, and trace amounts, 3.5 to 6.9, and 1.1 to 4.4%, respectively, for DELTA 7-avenasterol.For earlier work see NAR 44, 123.
