Abstract Ground seeds of Centaurea calcitrapa L. and Centaurea solstitialis L. harvested at Olavarria (Buenos Aires, Argentina) were defatted yielding 22,88% and 25,53% (dry basis) of crude oils, having II 125,8 and 126,7, respectively. Fatty acids composition values (C.G.L.) showed that both seed oils are typical "non-yellowing drying oils" (65-74% 18:2; less than 10% of saturated acids, and traces of 18:3). Both oils revealed the presence of traces of conjugated trienic double bonds.
