Abstract Values are tabulated for characteristics and fatty acid composition of kernel oil of 60 named varieties of peach grown in Tuscany. Ranges for characteristics are: oil content (% in DM), 19.3-50.6; refractive index, 1.4690-1.4724; I value, 89.0-108.5; saponification value, 188-193. UV absorption values at 4 wavelengths are also quoted. Fatty acid ranges are (%): palmitic acid, 6.1-12.3; palmitoleic acid, 0.2-1.1; heptadecanoic acid, 0-0.9; stearic acid, 1.0-3.2; oleic acid, 44.6-80.5; linoleic acid, 11.6-41.2.
