Abstract This revised edition of an earlier monograph brings to date a wide range of information on new sources of oils, methods of processing, procedures of testing and analysis and other subjects. In view of the importance of fats and oils in their varied utilization for edible, medicinal and technical purposes to the conduct of the war, this volume appears at a most appropriate time. A considerable portion of the text has been rewritten, and descriptions of a large number of new fats and oils have been added, along with new methods and modifications of older ones. A survey of vegetable fats and oils, their distribution, methods of extraction and refining, nutritional value, stabilization and emulsions, is followed by 3 chapters on the known vegetable fats and oils classified according to their I numbers, a comprehensive chapter on fatty acids and the very important chapter on methods.
