Determination of oil content in different varieties of pecan (Carya illinoensis Koch.) and its fatty-acid composition

Abstract

Total oil content, contents of palmitic, stearic, oleic, linoleic and linolenic acids and those of saturated and unsaturated acids are given for eight cultivars. Oil content was highest in Piracicaba, with 74.27%, and lowest in Moneymaker, with 60.06%. Unsaturated acids were also highest in Piracicaba, with 98.78%, being lowest in Stuart, with 96.29%.
