Abstract Millet seeds contain 1.8-3.9% lipids; the majority of which are concentrated in the embryo (24%). Fatty acid composition of millet lipids was determined by gas chromatography. Major fatty acids are palmitic acid, stearic acid, oleic acid, linoleic acid, linoleic acid and gondoinic acid, with >1% of myristic acid, palmitoleic acid and saturated C 15 and C 20 acids. Most of the fatty acids present in millet lipids are unsaturated (78.4-82.1%), while the proportion of saturated acids amounts to 17.9-21.6%.
