Abstract The fatty acid distribution in triglycerides from C. avellana (hazelnut) seeds was studied by TLC, GLC and lipase hydrolysis. Tabulated results show the % acid composition of oil, deacidified oil, free fatty acids, mono-, di- and triglycerides, di-mono-glycerides and tri- and di-mono-glyceride fractions of varying degrees of unsaturation, and the glyceride structure of di-, tri- and tetra unsaturated triglycerides. Oleic acid accounted for 89.6% of all residues at position 2. Results agree with the 1-3 random and 2-random hypothesis. [Journal of the American Oil Chemists Society (1963) 40, 242].
