Seed oils of A. blitum var. oleracea, A. gangeticus and A. paniculatus (used as leafy vegetables and medicinal plants) were analysed for fatty acids and other components. Linoleic acid was the major component in A. blitum and A. paniculatus whereas oleic acid was the principal compound in A. gangeticus. Palmitic and stearic acids were the major saturated acids.
