Compositional study on some Egyptian peanut varieties

Abstract

Fat-free meal of groundnuts, cv. Giza 1, 2 and 4, contained, on average, sugar 25.2, sulphur 0.6, ash 4.6, nitrogen 9.3, phosphorus 0.9% and, in mu g/g, calcium 95, copper 10, iron 56, sodium 17, zinc 18 and magnesium 3138. There was little difference between varieties in values tabulated for fatty and amino acids.
