Abstract The authors investigated gas chromatographically the amino acid composition of triglycerides contained in, and 2-monoglycerides obtained from (using pancreatic lipase) 4 cruciferous plant oils and calculated the different glyceride structures. Tri-unsaturated glycerides prevail in these oils.
