Abstract The seed oils from Paeonia japonica (Yamashakuyaku) in the case of frozen samples and freeze-drying ones were examined for compositions of fatty acid and sterol and compared each other. The fatty acid compositions were almost similar, and total amount of C18: l' c18:2 and c18:3 was found ca. 93- 94% The predominant sterols were sitosterol mastatrienol45.0%(frozen sample) and 39.7o/c(freeze-drying sample).
